Clifford Brown is a busy Brasserie kitchen based in Knowle Village, Fareham. They offer a mix of classic and modern French-English cuisine and is a well established and popular restaurant
 
They are looking for an Apprentice Commis Chef to start their hospitality career and join their successful team. 

This job will involve

  • Receiving & checking deliveries
  • Putting deliveries away
  • Washing up
  • General cleaning of the kitchen
  • Peeling & chopping of vegetables
  • Using knives & small machinery
  • Cutting meat & fish
  • Preparing dishes to cook from raw ingredients
  • Cooking dishes & checking temperatures
  • Cooking dishes to order
  • Re heating dishes to required temperature
  • Food hygiene training
  • Health & safety training
  • Fire Training
  • Checking lists of jobs to be done daily
  • Checking ingredients to be ordered
  • Ordering ingredients
  • Cleaning kitchen appliances
  • Sweeping & Mopping the floor
  • Using the dishwasher
  • Recording of wastage
Skills Required:
An interest for food & cooking. A wish to pursue a career in catering & hospitality. 
 
Personal Qualities:
Cheerful, presentable, punctual and hard working
 
Qualifications Required:
Minimum of GCSE English and Maths A-E / 9-2 or Functional Skills Level 1
 
You will be working full time within the restuarant and attend college in a block release pattern (6 times) to gain theory and practical knowledge. You will need to complete course and homework as well as builing up a portfolio of evidence to show you learning. You will be assessed via a profressional discussion and cooking observations. The apprenticeship will last 13 months.
